BROWN RICE PILAF
Our systems quickly store up toxins if we are not careful and this recipe is great for helping remove them from the body as well as give you a powerful nutritional punch. You can use every night as an accompaniment to your evening meal or as a light lunch option.
Four servings. You can freeze three portions and use as needed.
225gm /8oz of brown rice (you can add some wild rice for flavour)
15ml/ 1 tbsp. olive oil.
750 ml/1 ¼ pints of salt free vegetable stock.
1 large finely chopped onion.
10 chopped walnuts.
4 oz of finely chopped spinach or dandelion leaves.
1 crushed clove of garlic.
Florets of broccoli washed and chopped.
Salt and pepper to taste.
Wash the rice under cold running water and drain.
Heat your oil in a large pan and add the onion and the garlic and cook until soft and brown.
Add the rice and stir in the stock.
Bring to the boil, cover and simmer for 20-25 minutes.
Stir in the chopped spinach or dandelion leaves, walnuts and seasoning.
Serve with a garnish of raw broccoli.
This is wonderful with a few ounces of turkey or salmon.
