BANANA, ORANGE AND WALNUT SALAD 

This recipe is a lovely accompaniment to fish, meat or chicken dishes and served with a spinach leaf salad.  With the tomatoes, walnuts, bananas, oranges and spinach this is a great superfood salad.

2 Tablespoons of white wine vinegar
Salt and white pepper to taste.
1 teaspoon of honey
½ a small onion very finely chopped.
2 tablespoons of olive oil.
Juice of half a lemon
2 bananas peeled, sliced. (Sprinkle with the lemon juice)
2 large tomatoes quartered.
2 mandarin oranges peeled and segmented.
14 walnut halves 

Combine the vinegar, salt, pepper, honey and oil into a bowl.
Toss the banana in the dressing.
Add the tomatoes and the oranges and walnut halves. 

Arrange over a plate of young spinach salad leaves.
